  • 1 pound Chicken breast
  • 8 ounces Rice noodles
  • 0.5 cup Peanut butter
  • 0.25 cup Soy sauce
  • 2 tablespoons Lime juice
  • 1 tablespoon Brown sugar
  • 1 tablespoon Fish sauce
  • 2 cloves Garlic, minced
  • 1 cup Bean sprouts
  • 0.5 cup Chopped peanuts
  • 2 green onions Green onions, chopped

Preparation Steps

  • Cook rice noodles according to package directions.
  • In a large bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, and fish sauce.
  • Add cooked chicken and noodles to the bowl and toss to coat.
  • Stir in bean sprouts, peanuts, and green onions.
  • Serve immediately.

Notes

For a spicier Pad Thai, add a pinch of red pepper flakes to the sauce.
