A simple and delicious Chicken Caprese recipe that's perfect for a weeknight meal. Tender chicken breasts are topped with fresh mozzarella, juicy tomatoes, and basil for a flavorful Italian-inspired dish.

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium tomatoes sliced
  • 8 slices fresh mozzarella
  • 0.25 cup fresh basil leaves chopped
  • 2 tablespoons balsamic glaze

  • Preheat oven to 400°F (200°C).
  • If the chicken breasts are thick, pound them to an even thickness of about 0.75 inches.

  • Heat olive oil in an oven-safe skillet over medium-high heat.

  • Sear the chicken breasts for 2-3 minutes per side until golden brown.
