Cheesy Carrot Macaroni Comfort Food

A comforting and healthy twist on classic macaroni and cheese, packed with cheesy goodness and hidden vegetables.

  • 8 oz Elbow Macaroni
  • 2 cups Shredded Carrots
  • 2 cups Milk
  • 0.5 cup Heavy Cream
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Shredded Gruyere Cheese
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Cook the macaroni according to package directions. Drain and set aside.
  • In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  • Gradually whisk in the milk and heavy cream until smooth. Bring to a simmer, stirring constantly.
  • Add the shredded carrots and cook until softened, about 5 minutes.
  • Remove from heat and stir in the cheddar and gruyere cheeses until melted and smooth. Season with salt and pepper.
  • Add the cooked macaroni to the cheese sauce and stir to combine.
  • Serve immediately and enjoy!

Notes

For a spicier kick, add a pinch of cayenne pepper.
