Preparation Steps
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the cream cheese, 3/4 cup of sugar, and vanilla extract until smooth.
Roll out the puff pastry and cut it into 8 rectangles.
Place a spoonful of the cheese mixture in the center of each rectangle and fold the corners in toward the center.
Brush the pastries with the beaten eggs and sprinkle with the remaining sugar.
Bake for 25 minutes or until golden brown. Let them cool before serving.
Notes
These Cheese Danishes can be stored in an airtight container at room temperature for up to 2 days.
