Carrot Salad Recipe

A refreshing and healthy carrot salad recipe, perfect as a side dish or light meal. This recipe uses fresh carrots, herbs, and a zesty vinaigrette.

  • 1 lb Carrots
  • 0.5 cup Chopped fresh parsley
  • 0.25 cup Chopped fresh cilantro
  • 0.25 cup Red onion, thinly sliced

Preparation Steps

  • Wash and peel the carrots. Use a vegetable peeler or mandoline to create thin ribbons or matchsticks.
  • Combine the carrots, parsley, cilantro, and red onion in a large bowl.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the carrot mixture and toss to combine.
  • Serve immediately or chill for later.

Notes

For a sweeter salad, add a tablespoon of honey or maple syrup to the dressing. You can also add other vegetables like bell peppers or cucumbers.
