Preparation Steps
Wash and peel the carrots. Use a vegetable peeler or mandoline to create thin ribbons or matchsticks.
Combine the carrots, parsley, cilantro, and red onion in a large bowl.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the carrot mixture and toss to combine.
Serve immediately or chill for later.
Notes
For a sweeter salad, add a tablespoon of honey or maple syrup to the dressing. You can also add other vegetables like bell peppers or cucumbers.
