Instructions
Preparation Steps
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, and cinnamon.
In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla and beat until combined.
Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in grated carrots.
Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 12-15 minutes or until edges are golden brown.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
These whoopie pies can be stored in an airtight container for up to 3 days.
