Carrot Cake Whoopie Pies

  • 1.5 cups all-purpose flour
  • 1 cup grated carrots freshly grated
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.5 cup butter softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and cinnamon.
  • In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla and beat until combined.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in grated carrots.
  • Drop rounded tablespoons of dough onto the prepared baking sheet. Bake for 12-15 minutes or until edges are golden brown.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These whoopie pies can be stored in an airtight container for up to 3 days.
