Carrot Cake Bars

Delicious and moist carrot cake bars, perfect for a sweet treat or dessert. Easy to make and packed with flavor!

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 cups grated carrots
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together carrots, oil, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool completely before cutting into bars.

Notes

Store leftover bars in an airtight container at room temperature for up to 3 days.
