Carne Guisada Recipe

A hearty and flavorful Mexican beef stew, perfect for a comforting meal.

  • 2 pounds beef chuck roast cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 4 ounces tomato sauce
  • 1 cup beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper optional
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Preparation Steps

  • Season the beef with salt and pepper.
  • Heat vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef in batches, then remove and set aside.

  • Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  • Return the browned beef to the pot. Add the diced tomatoes (undrained), tomato sauce, beef broth, chili powder, cumin, oregano, and cayenne pepper (if using).

  • Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 2 hours, or until the beef is tender and the sauce has thickened. Stir occasionally.
  • Season with additional salt and pepper to taste.

Notes

This carne guisada is delicious served with rice, beans, tortillas, or even over nachos.
