Caramel Apple Cupcakes

Instructions
Preparation Steps
Preheat the oven to 350°F (175°C) and line a cupcake tin with 12 liners.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
Fold in the grated apple.
Fill each cupcake liner halfway, then add a spoonful of caramel sauce in the center of each. Top with more batter until each liner is two-thirds full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Notes
These cupcakes are best served fresh but can be stored in an airtight container at room temperature for up to 2 days.
