Cajun White Chicken Chili

This Cajun White Chicken Chili is a flavorful and hearty soup, perfect for a chilly evening. It's packed with tender chicken, creamy beans, and a kick of Cajun spice.

  • 1.5 lb Boneless, skinless chicken breasts
  • 1 tablespoon Olive oil
  • 1 large Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 4 cups Chicken broth
  • 15 oz Great Northern beans drained and rinsed
  • 15 oz Cannellini beans drained and rinsed
  • 4 oz Green chilies diced
  • 0.5 cup Heavy cream
  • 0.25 cup Chopped cilantro
  • 0.25 cup Shredded Monterey Jack cheese

Preparation Steps

  • Cut the chicken breasts into 1-inch pieces.
  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned, about 5 minutes.
  • Add the onion and cook until softened, about 3 minutes. Stir in the garlic, Cajun seasoning, oregano, and cumin. Cook for 1 minute more.
  • Pour in the chicken broth, add the beans and green chilies. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Stir in the heavy cream and simmer for another 5 minutes.
  • Season with salt and pepper to taste. Garnish with cilantro and Monterey Jack cheese before serving.

Notes

Serve with a dollop of sour cream and a side of crusty bread for a complete meal.
