Instructions
Preparation Steps
Cut the chicken breasts into 1-inch pieces.
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned, about 5 minutes.
Add the onion and cook until softened, about 3 minutes. Stir in the garlic, Cajun seasoning, oregano, and cumin. Cook for 1 minute more.
Pour in the chicken broth, add the beans and green chilies. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in the heavy cream and simmer for another 5 minutes.
Season with salt and pepper to taste. Garnish with cilantro and Monterey Jack cheese before serving.
Notes
Serve with a dollop of sour cream and a side of crusty bread for a complete meal.
