Instructions
Preparation Steps
In a large pot, sauté the onion and garlic in olive oil until softened.
Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Stir in the Cajun seasoning and heavy cream. Heat through, do not boil.
Garnish with chopped green onions and serve hot.
Notes
For a spicier soup, add more Cajun seasoning or a pinch of cayenne pepper. You can also add other vegetables, such as celery or bell peppers.
