  • 2 lbs Yukon Gold Potatoes peeled and diced
  • 1 cup Chopped Onion
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 tsp Cajun Seasoning
  • 1 cup Heavy Cream
  • 0.5 cup Chopped Green Onions for garnish

Preparation Steps

  • In a large pot, sauté the onion and garlic in olive oil until softened.
  • Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  • Stir in the Cajun seasoning and heavy cream. Heat through, do not boil.
  • Garnish with chopped green onions and serve hot.

Notes

For a spicier soup, add more Cajun seasoning or a pinch of cayenne pepper. You can also add other vegetables, such as celery or bell peppers.
