Butter Pecan Banana Bread

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 3 medium ripe bananas, mashed
  • 1 cup chopped pecans
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, baking soda, and salt.
  • In a separate bowl, cream together sugars and melted butter. Beat in eggs one at a time, then stir in mashed bananas and vanilla.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in pecans.
  • Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store leftover banana bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
