Buffalo Chicken Mac and Cheese

Creamy mac and cheese with a spicy buffalo chicken kick! This recipe is perfect for a game day snack or a comforting weeknight meal.

  • 1 pound elbow macaroni
  • 1.5 cups shredded cheddar cheese
  • 0.5 cups shredded mozzarella cheese
  • 1 cup cooked chicken, shredded
  • 0.5 cup buffalo wing sauce
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups milk

Preparation Steps

  • Preheat oven to 350°F (175°C). Cook macaroni according to package directions.
  • In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  • Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and simmer for 5 minutes, or until thickened.
  • Stir in cheeses until melted. Add cooked chicken and buffalo sauce. Combine with cooked macaroni.
  • Pour into a greased 9x13 inch baking dish. Bake for 20-25 minutes, or until golden brown and bubbly.

Notes

Serve immediately. Garnish with extra cheese and green onions if desired.
