Buffalo Chicken Cups

Delicious and easy buffalo chicken cups, perfect for appetizers or a light meal!

  • 2 cups cooked shredded chicken
  • 0.5 cup buffalo wing sauce
  • 0.25 cup cream cheese, softened
  • 0.25 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped fresh parsley
  • 12 mini phyllo shells, thawed if frozen

Preparation Steps

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the shredded chicken, buffalo wing sauce, softened cream cheese, and ranch dressing. Mix well until evenly coated.
  • Stir in the shredded cheddar cheese and chopped parsley.
  • Place the mini phyllo shells on a baking sheet.
  • Spoon the chicken mixture evenly into each phyllo shell.
  • Bake for 15-20 minutes, or until the filling is heated through and the cheese is melted and lightly golden.
  • Garnish with extra parsley if desired. Serve warm.

Notes

These buffalo chicken cups can be made ahead of time and reheated. They are also a great make-ahead appetizer.
