A vibrant and healthy broccoli salad perfect for a light lunch or side dish. This recipe features crunchy broccoli florets, sweet cranberries, and a creamy dressing.

  • 1 lb Broccoli florets Cut into bite-sized pieces
  • 0.5 cup Dried cranberries
  • 0.5 cup Sunflower seeds
  • 0.25 cup Red onion Finely chopped

Preparation Steps

  • Blanch broccoli florets in boiling water for 2 minutes. Immediately plunge into ice water to stop cooking.
  • In a large bowl, combine broccoli, cranberries, sunflower seeds, and red onion.
  • Whisk together the dressing ingredients (see recipe for details) and pour over the salad.
  • Toss gently to coat.
  • Chill for at least 30 minutes before serving.

Notes

For a creamier dressing, add a dollop of plain Greek yogurt or mayonnaise. Feel free to adjust the ingredients to your liking.
