  • 4 cups fresh blueberries
  • 1 Tablespoon lemon juice freshly squeezed
  • 2 Tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter cut into small pieces
  • 1 piece pie crust store-bought or homemade, enough for a 9-inch pie

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine sugar, cornstarch, and blueberries. Toss until blueberries are evenly coated.
  • Add lemon juice and vanilla extract to the mixture and stir gently.
  • Pour the blueberry mixture into the prepared pie crust and dot with butter.
  • Cover with the top crust, crimp edges to seal, and cut slits to allow steam to escape.
  • Place the pie on a baking sheet and bake for 45 minutes or until the crust is golden brown and filling is bubbly.
  • Allow the pie to cool for at least 2 hours before serving.
