Blueberry Banana Bread

This delightful blueberry banana bread is moist, flavorful, and packed with juicy blueberries and mashed bananas.

  • 1.5 cups all-purpose flour sifted
  • 0.5 cup unsalted butter melted
  • 1 cup sugar granulated
  • 2 large eggs beaten
  • 3 pieces bananas ripe & mashed
  • 1 cup blueberries fresh or frozen
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, combine the flour, baking soda, and salt. Set aside.
  • In another bowl, mix the melted butter and sugar until well blended. Stir in the beaten eggs and vanilla extract.
  • Mash the bananas and add them to the wet mixture, stirring well.
  • Gradually add the wet mixture to the dry ingredients, stirring until just combined. Carefully fold in the blueberries.
  • Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

This bread is perfect for breakfast or as a snack and pairs beautifully with a cup of coffee or tea.
