Beet Salad Recipe

A vibrant and refreshing beet salad with a zesty dressing, perfect as a side dish or light meal.

Ingredients

  • 0.5 lb cooked beets peeled and diced
  • 0.25 cup red onion finely chopped
  • 0.33 cup feta cheese crumbled
  • 0.5 cup walnuts chopped and toasted

Dressing

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 0.5 tsp honey
  • salt to taste
  • black pepper to taste

Preparation Steps

  • In a large bowl, combine the diced beets, red onion, crumbled feta cheese, and toasted walnuts.
  • In a small bowl or jar, whisk together the olive oil, red wine vinegar, dijon mustard, and honey until well combined.
  • Pour the dressing over the beet mixture and gently toss to coat everything evenly.
  • Season with salt and black pepper to taste.
  • Serve immediately or chill for at least 30 minutes to allow the flavors to meld.

Notes

This beet salad is best served chilled. You can substitute goat cheese for feta if preferred.
