  • 1 pound Potatoes Yukon Gold or red potatoes, cut into 1-inch cubes
  • 0.5 cup Mayonnaise
  • 2 tablespoon Dijon mustard
  • 0.25 cup Celery finely chopped
  • 0.25 cup Red onion finely chopped
  • 3 hard-boiled eggs Eggs chopped
  • 2 tablespoon Fresh dill chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Boil potatoes in salted water until tender. Drain and let cool slightly.
  • In a large bowl, whisk together mayonnaise and Dijon mustard.
  • Add the cooled potatoes, celery, red onion, chopped eggs, and dill to the bowl.
  • Gently stir to combine, being careful not to mash the potatoes.
  • Season with salt and pepper to taste.
  • Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
