Asian Cucumber Salad

A refreshing and tangy Asian cucumber salad with a sweet and savory dressing. Perfect as a side dish for any meal!

Salad Ingredients

  • 2 large Cucumbers thinly sliced
  • 0.5 cup Red Onion thinly sliced
  • 0.25 cup Fresh Cilantro chopped
  • 0.25 cup Sesame Seeds toasted

Dressing Ingredients

  • 4 tablespoon Rice Vinegar
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 0.5 teaspoon Red Pepper Flakes optional

Preparation Steps

  • In a large bowl, combine the sliced cucumbers and red onion.
  • In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and red pepper flakes (if using).
  • Pour the dressing over the cucumber and onion mixture. Toss gently to coat.
  • Stir in the chopped cilantro and toasted sesame seeds.
  • Serve immediately or chill for at least 30 minutes to allow the flavors to meld.

Notes

This salad can be made ahead of time. For best results, drain any excess liquid before serving if it has been sitting for a while.
