Instructions
Preparation Steps
In a large bowl, combine the sliced cucumbers and red onion.
In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, and red pepper flakes (if using).
Pour the dressing over the cucumber and onion mixture. Toss gently to coat.
Stir in the chopped cilantro and toasted sesame seeds.
Serve immediately or chill for at least 30 minutes to allow the flavors to meld.
Notes
This salad can be made ahead of time. For best results, drain any excess liquid before serving if it has been sitting for a while.
