Apple Pie Macarons

These delightful Apple Pie Macarons capture the essence of fall with a sweet and spiced apple filling nestled between delicate almond meringue cookies.

  • 1 cup almond flour
  • 0.5 cup powdered sugar
  • 2 large egg whites room temperature
  • 0.5 cup granulated sugar
  • 1 teaspoon apple pie spice
  • 1 cup apple butter

Preparation Steps

  • Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  • In a food processor, combine almond flour and powdered sugar. Pulse until finely ground.
  • In a separate bowl, beat egg whites until soft peaks form. Gradually add granulated sugar, beating until stiff, glossy peaks form.
  • Gently fold the dry ingredients into the egg whites until just combined. Add apple pie spice and fold again.
  • Pipe macaron batter onto prepared baking sheets, leaving space between each macaron.
  • Let the macarons sit at room temperature for 30-60 minutes, or until a skin forms on top.
  • Bake for 12-15 minutes, or until the macarons are set.
  • Let the macarons cool completely before filling.
  • Pipe apple butter onto the bottom of half of the macarons and top with the remaining macarons.

Notes

Store macarons in an airtight container at room temperature for up to 3 days.
