Apple Brie Stuffed Chicken

Juicy chicken breasts stuffed with a delightful blend of sweet apples and creamy Brie cheese, baked to golden perfection.

  • 4 large boneless, skinless chicken breasts
  • 0.5 cup diced apple such as Honeycrisp or Fuji
  • 0.25 cup diced Brie cheese rind removed
  • 0.125 cup chopped walnuts optional
  • 0.0625 teaspoon salt
  • 0.0625 teaspoon black pepper
  • 0.03125 teaspoon garlic powder
  • 0.0625 tablespoon olive oil

Preparation Steps

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • In a small bowl, combine the diced apple, Brie cheese, and walnuts (if using).
  • Carefully slice a pocket into the thickest side of each chicken breast, being careful not to cut all the way through.
  • Season the chicken breasts inside and out with salt, pepper, and garlic powder.
  • Stuff each chicken breast pocket with the apple and Brie mixture. Secure with toothpicks if necessary.
  • Place the stuffed chicken breasts in the prepared baking dish. Drizzle with olive oil.
  • Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Let rest for a few minutes before serving.

Notes

Serve with a side salad or your favorite roasted vegetables for a complete meal.
