Prepare the crust by combining flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough comes together. Wrap and chill for at least 30 minutes.
Roll out the dough and place it in a pie plate. Bake at 375°F (190°C) for 15 minutes.
In a saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in beaten eggs and vanilla.
Pour the custard into the pre-baked pie crust. Bake for 30-40 minutes, or until set. Let cool completely before serving.
