  • 2 cups Mandarin orange segments Canned is fine
  • 2 cups Pineapple chunks Fresh or canned
  • 1 cup Mini marshmallows
  • 1 cup Shredded coconut
  • 1 cup Greek Yogurt
  • 0.5 cup Cream of coconut

Preparation Steps

  • In a large bowl, combine mandarin oranges, pineapple chunks, marshmallows, and shredded coconut.
  • In a separate bowl, whisk together the Greek Yogurt and cream of coconut.
  • Pour the creamy mixture over the fruit and marshmallows. Gently mix to combine.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For a sweeter ambrosia salad, add more marshmallows or a drizzle of honey. You can also add other fruits such as grapes, cherries, or strawberries.
