Lemon Blossoms

Lemon Blossoms are a burst of sunshine in every bite! These light, fluffy mini cakes are bursting with fresh lemon flavor and topped with a sugary glaze that makes them irresistibly sweet. Perfect for a springtime treat, a special occasion, or when you’re simply craving something zesty, these lemon blossoms are sure to brighten your day and satisfy your sweet tooth!

Ingredients

  • 1 box (15.25 oz) lemon cake mix
  • 1 box (3.4 oz) instant lemon pudding mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar
  • 2 tbsp fresh lemon juice
  • 2 tbsp melted butter
  • 1 tbsp milk

Directions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
  2. Prepare the Batter: In a large mixing bowl, combine the lemon cake mix, lemon pudding mix, eggs, vegetable oil, water, lemon zest, and vanilla extract. Beat together with an electric mixer on medium speed for about 2 minutes until the batter is smooth and well combined.
  3. Fill the Muffin Tin: Spoon the batter into the muffin tin, filling each cup about ¾ full.
  4. Bake: Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove the muffins from the oven and let them cool for 5 minutes in the tin before transferring them to a wire rack to cool completely.
  5. Prepare the Glaze: In a small bowl, mix together the powdered sugar, fresh lemon juice, melted butter, and milk until smooth.
  6. Glaze the Muffins: Once the lemon blossoms have cooled, drizzle the glaze over each muffin, making sure to cover them evenly. Allow the glaze to set for a few minutes before serving.
  7. Serve: Enjoy your soft, sweet lemon blossoms as a delightful snack or dessert!

Notes

  • Lemon Flavor: If you prefer a stronger lemon flavor, feel free to add a bit more lemon zest to the batter or increase the amount of lemon juice in the glaze.
  • Storage: Store leftover lemon blossoms in an airtight container at room temperature for up to 3 days. You can also freeze them for up to 3 months. Simply thaw at room temperature before serving.
  • Make it a Lemon Party: For extra citrus flair, try adding a bit of lemon extract to the glaze or even a pinch of lemon zest for added zing.
  • Customization: For a fun twist, add a handful of poppy seeds to the batter for a delightful crunch.
