Ingredients

  • 20 large white mushrooms, stems removed and cleaned
  • 1 cup cooked crab meat
  • ½ cup cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • 2 tbsp mayonnaise
  • 1 tbsp fresh parsley, finely chopped (plus more for garnish)
  • 1 clove garlic, minced
  • ½ tsp smoked paprika
  • ¼ tsp ground black pepper
  • ¼ tsp salt
  • 2 tbsp breadcrumbs
  • 1 tbsp olive oil (for drizzling)

Directions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Mushrooms: Clean the mushroom caps with a damp cloth and remove the stems. Arrange them hollow-side up on the prepared baking sheet.
  3. Mix the Filling: In a medium bowl, combine the crab meat, cream cheese, Parmesan cheese, mayonnaise, parsley, garlic, smoked paprika, salt, and pepper. Mix until smooth and well combined.
  4. Stuff the Mushrooms: Spoon the crab mixture into each mushroom cap, mounding slightly for a generous filling.
  5. Top with Breadcrumbs: Sprinkle breadcrumbs evenly over the stuffed mushrooms. Drizzle a little olive oil on top for extra crispiness.
  6. Bake: Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
  7. Garnish and Serve: Remove from the oven and sprinkle with additional chopped parsley for a fresh finish. Serve warm.

  • Crab Options: Use fresh, canned, or imitation crab meat depending on your preference and budget. Just make sure to drain and flake it well.
