Ingredients

  • 2 cups cooked chicken, shredded or diced (about 1 lb)
  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tsp Dijon mustard
  • 1 celery stalk, finely chopped
  • ¼ cup red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • ½ tsp garlic powder
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste
  • 1 tsp lemon juice
  • Optional mix-ins: ¼ cup dried cranberries or ¼ cup chopped pecans

Directions

  1. Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, garlic powder, lemon juice, salt, and pepper until smooth.
  2. Add the Chicken and Veggies: Fold in the chicken, celery, red onion, and parsley. Mix until all the ingredients are evenly coated with the dressing.
  3. Adjust Seasoning: Taste and adjust the salt, pepper, or lemon juice if needed.
  4. Optional Add-ins: Stir in dried cranberries or chopped pecans for added texture and flavor.
  5. Chill and Serve: Cover the bowl and refrigerate the chicken salad for at least 30 minutes to let the flavors meld together. Serve chilled.
